Kathy's Mini Strawberry Danishes

Kathy has perfected this recipe over many years, trying different ratios of ingredients until getting it just right. She started bringing these delicious mini Danishes into the GreenStalk office in 2021, and they quickly became a staff favorite. We hope you enjoy them as much as we do!

1 large egg plus 1 yolk
8 ounces cream cheese (room temperature)
4 strawberries mashed in a food processor or blender
16 fresh strawberries, halved
2 ½ tablespoons sugar (plus sugar for dusting)
2 teaspoons fresh lemon juice
2 teaspoon vanilla extract, divided
1 pack (17.3 ounce) frozen puff pastry sheets, thawed (contains 2 sheets)
2 cups powdered sugar
2 tablespoons butter, softened
3-4 tablespoons milk

Instructions:

Preheat oven to 400 degrees. Line 2 large baking pans with parchment paper.

Beat 1 whole egg with a teaspoon of water in a small bowl and set aside.

Beat the egg yolk, cream cheese, sugar, lemon juice, mashed strawberries, and 1 teaspoon vanilla in a medium bowl with an electric mixer on medium-high until smooth.

Lay out the sheets of puff pastry and cut each sheet with a pizza cutter into 16 squares. Place squares about 1 inch apart on the baking sheet.

Dollop roughly 1 tablespoon of the cream cheese mixture onto each small square — do not spread the cream cheese mixture. Brush the exposed ends of each of the squares with the egg wash, then dust with sugar.

Bake for about 18 minutes, or until puffed and slightly golden brown around the edges. While the pastry is still warm, place a halved strawberry in the center of each square and press down.

In a small bowl, combine the powdered sugar, softened butter, remaining vanilla extract, and 3-4 tablespoons milk (or as much as needed for glaze). Mix until smooth and almost the consistency of being pourable. Drizzle over each danish.

Makes 32 Danishes. Enjoy!
